Brillat Savarin/Brie a la Truffe

If you can't indulge yourself at Christmas, when can you do it? And if you're going for full on decadence, then grab yourself some of our wickedly sinful festive Brillat-Savarin and Brie a la Truffe! Brillat-Savarin, above, is what's known as a triple cream cheese – double cream is added to full fat milk before it's curded and the cheese is soft-ripened for a couple of weeks in a dry cellar. This is where it develops a natural bloomy rind and a rich texture like a dense clotted cream. It's quite a skilful process too as the high fat content requires careful handling to produce a buttery paste with mushroomy undertones and a delicately sour lactic acidity. Totally delicious on its own but you can add to the decadence by munching it with fresh sweet strawberries or dribbling a wee bit of floral honey on it. Made with pasteurised cow's milk and natural rennet. We also have truffle Brillat-Savarin in a lovely presentation box for an amazing Christmas present!

Meanwhile, there's also our rich and indulgent Brie a la Truffe, above. Picture pressing a cheese knife into that gooey paste and spreading its stickiness onto crusty French bread, to enjoy with a chilled glass of champagne! Made from raw milk in Meuses, Lorraine, it's buttery and creamy with a sandwich filling of creme fraiche and chopped black truffles. The truffles bring out the earthy, yeasty mushroom-like qualities of the brie, while the brie rounds the flavour of the truffle into a massively aromatic depth. Just the sort of creamy luxury that's needed on a cold winter's evening!

Semi-hard, orangey-brown washed rind, delicate, fragrant and smooth with a sweet tang and slightly nutty taste. Unpasteurised, vegetarian rennet, from England.

EWE
Manchego Ojos del Guadiana – Rich, creamy, sweet, piquant, aromatic, fruity and savoury with subtle nutty notes and an aftertaste of sheep's milk. Unpasteurised, traditional rennet, from Spain. 
 
HARD PRESS
Black Bomber Smooth, rich, creamy and tangy with a long deep flavour and crystalline crunches. Pasteurised cow’s milk and vegetarian rennet, from Wales.
 
CONTINENTAL
Comté – Firm, slightly grainy and very dense ivory to yellow paste. Nutty and sweet with a long creamy finish. Unpasteurised cow’s milk and traditional rennet, from France.

SOFT
Vacherin Mont d'Or
Soft, creamy and very more-ish, hints of meadow flowers and white wine with a woody finish. Unpasteurised cow's milk, traditional rennet, from France.

BLUE
Stichelton
Smooth, buttery, rich, lactic, salty and spicy with meaty undertones. Unpasteurised cow’s milk, traditional rennet, from England.
