spotted at the markets: tender shallots, hot potatoes and oozy haloumi

Tender shallots: French shallots are delicious peeled and added to braises and sauces, and Kingfisher Citrus has bags of them on their stalls at the moment.  The family constantly works to diversify their crop range and adapt to the climate and seasons, and the onion varieties are a good fit.  They’ll be at Coburg, Vegout, Woodend, Alphington and Swan Hill.

Hot potatoes: The Trentham Potato Co. bakes a range of their farm-grown potatoes at the markets, ready to eat hot with toppings made from other stallholders’ produce. They generally bake Nicola, Maris Piper and sometimes King Edward and Russet so that customers can try out a new variety before taking a bagful home. Look out for them at Coburg.

Oozy haloumi: Boatshed Cheese’s haloumi is made from a careful blend of different milks to replicate the fat and protein profile of original Cyprian sheeps’ milk cheese. Sliced and pan fried briefly in a spot of olive oil in a hot pan, it gets a good crust on the outside and is rich and oozy in the middle. Find some at Kingston and Flemington.
