Alex and Kate Rogers own Woodend Sourdough Bakery.

First a chef, then a school teacher, Alex loved teaching but found education system bureaucracy was not for him. So he decided to become either a builder or a baker and - lucky for us - settled on baking.

Before moving to Woodend and now just selling at markets, for 11 years Alex and Kate owned a retail and wholesale bakery in the Melbourne suburb of Seddon. Like all businesses, the bakery has had to adapt to circumstances but at its heart - wholesale, retail or at markets - it's always been about creating delicious, baked goods.

Fast-forward to today and Alex now bakes in their own commercial kitchen located directly alongside their home in Woodend in the cool Macedon Ranges.

Liam, pictured above, knows the routine and has been working alongside Alex on and off for ten years. Preparation for weekend markets begins on Tuesdays with taking delivery and weighing up of ingredients. Wednesdays and Thursdays involve preparing the loaves and pastries. Unlike fast-rising, yeasted breads, several days of slow and gentle fermentation with sourdough culture allows the development of better flavour and improved nutrition.

On Friday night the weekly, marathon, all-night baking begins!

In Eating Well magazine, dieticians have noted that "what sets sourdough apart from traditional bread is that it is made by fermenting flour and water, rather than adding yeast to create a leaven. The fermentation process helps to unlock B vitamins in the bread, which help with energy metabolism." They go on to point out that sourdough is good for your gut, can aid digestion, promotes healthy ageing and can assist blood sugars to remain in a healthy range. Woodend Sourdough now produces 49 unique bread and pastry products. They sell at farmers' markets including VFMA-accredited Riddells Creek, Woodend and South Geelong.
