WHAT THE HECK IS CHARCUTERIE?

AND WHY YOU NEED THIS AT YOUR PARTY!

 
 

Charcuterie is the culinary art of preparing meat products such as bacon, salami, ham, sausage, terrines, galantines, ballotines, pâtés, and confit. Someone that prepares charcuterie is called a Charcutier.

So why is charcuterie suddenly all the rage?

Well as the saying goes “Everything old is new again”. Like many traditional foods that are making a comeback, charcuterie is a culinary art developed from necessity; it is the way meats were preserved long before the days of refrigeration. And just like pickles, fermented vegetables, home drafted beer, broth and kombucha, charcuterie has been revived and brought front and center by the traditional food movement. And in my humble opinion front and center is exactly where it deserves to be. 

Paired with an array of fabulous cheeses, our charcuterie and cheese plates are SO much more than a nibble and a nosh!

CURED Table & Tap and 18th & 21st are two cool, distinctive dining concepts housed under one roof in Columbia.

CURED Table & Tap (the name is derived from the large charcuterie and raw bar that's the focal point of the dining room), offers classic comfort food featuring farm-to-table appetizers, charcuterie and raw bar options, sammies, and entrees.

18th & 21st (named after the constitutional amendment that enacted prohibition and the subsequent amendment that repealed it) is a modern take on a sophisticated, prohibition era supper club. It features elevated dining, speakeasy-inspired cocktails, live music, and dancing.
       
My friend and I ate in CURED and loved the casual yet elegant ambiance. We had pork chops and a grilled bistro loin and then went into 18th & 21st to enjoy cocktails and live jazz. A great evening out!

FYI-During concert season, you can park free, eat dinner and waltz across the street to Merriweather Post Pavilion! The restaurants are in the new One Merriweather building--and it's like 350 yards from the Pavillion's main stage!

It was an honor to host this one-of-a-kind event to benefit The Red Devils.

Ella Pritsker, Michele Speaks and I collaborated with The Red Devils team to create The Red Affair, an intimate patron dinner raising funds to provide treatment support for Baltimore City and County breast cancer families.

Our exquisite "red" menu was expertly paired with Pinot Noirs chosen by The French Paradox Wines in Stevenson Village.

I'm so proud of my team--we raised close to $15,000!.
