It's a weekend with picnics and barbecues, and maybe a parade. For some, it's the start of the fall season and anticipation of football.

Watermelon, Tequila Cocktails

What better way to cool off, chill out and celebrate the holiday weekend than with a cool and refreshing summer cocktail? This watermelon, tequila cocktail will put a smile on your face.
Ingredients
1/4 cup water 1/4 cup granulated sugar 8 cups diced seedless watermelon (1 pound) 1/4 cup fresh lime juice 1 3/4 cups blueberries 3/4 cup lightly packed fresh mint leaves, plus 8 sprigs for garnish 1 1/4 cups silver tequila Ice
How to Make It
Step 1
In a small saucepan, bring the water to a simmer with the sugar and stir over moderate heat until the sugar is dissolved about 1 minute; let the sugar syrup cool.
Step 2
In a blender, puree the watermelon until smooth. Set a fine-mesh strainer over a bowl and strain the watermelon juice, pressing gently on the solids to extract as much juice as possible. Discard the pulp.
Step 3
In a large pitcher, combine the sugar syrup with the lime juice, blueberries, and mint leaves. Using a wooden spoon, lightly muddle the blueberries and mint. Add the watermelon juice and tequila. Refrigerate until chilled, about 2 hours.
Step 4
Pour the cocktail into tall ice-filled glasses. Garnish with the mint sprigs and serve.

For this month’s column, I’m forgoing a restaurant suggestion b’ cuz I’m still thinking about my fabulous and relaxing trip to Greece. It took me a week and a half to stop looking at my watch and settle into the tranquil way of life enjoyed by those in the Mediterranean.
It’s a very different lifestyle then I live here—and the food is a huge part of that distinction.
It emphasizes olive oil, vegetables, beans, fruit, moderate amounts of alcohol (bit wine is ok!) and low quantities of meat and dairy products.
In the Greek culture, "food is life" and the Mediterranean diet emphasizes plant-based ingredients in combination with exercise and a healthy social life.
The diet is traditionally characterized by simplicity, moderation, variation, seasonality and the sparing use of meat. Most food is home-grown, foraged, seasonal, fresh and “everything in moderation”.
The Mediterranean Diet in its most holistic sense is one in which fresh, seasonal, home-cooked food and community are interwoven in ways that sustain physical and emotional health, human relationships, and the environment.
If you google it, they have less cancer and heart disease than Americans, and virtually no dementia, or depression. And--they are 10 times more likely to live to 90 or even 100.
But the good life in Greece is about more than just food.
The perspective on life is more about time and living in a way that seems to stretch it. There is a telling joke about the time of day always being “late-thirty.” Read that to mean that it’s always the present.
It takes a cultivated mindfulness to live this way, especially today, but I’m going to try to integrate the Mediterranean way of life into my daily routines here in the states. It’s an approach to life and eating that requires you to actually make time for enjoying both.
