Fighting the Flu Naturally

For the featured article in our Women's History month newsletter, we wanted to do something special. Rather than telling you something about a new treatment or cosmetic, we're going to share with you the stories of three women who were pioneers in cosmetics. Three women who, with their wits, vision, and determination, shaped an industry.

The first of these women is Florence Nightingale Graham, who used the pseudonym Elizabeth Arden for business. Elizabeth built a cosmetics empire, and by 1929 she owned 150 upscale salons across the United States and Europe. Her 1,000 products were found in the luxury market in 22 countries. She was the sole owner, and at the peak of her career she was one of the wealthiest women in the world.

In her salons and through her marketing campaigns, Elizabeth Arden stressed teaching women how to apply makeup, and pioneered such concepts as scientific formulation of cosmetics, beauty makeovers, and coordinating colors of eye, lip, and facial makeup.

The second woman, Estée Lauder, was the co-founder, along with her husband, of Estée Lauder Companies, her eponymous cosmetics company. Lauder was the only woman on Time magazine's 1998 list of the 20 most influential business geniuses of the 20th century, as well as a recipient of the Presidential Medal of Freedom. Estée was also honored by the French Government. She received the Knight class of the Legion of Honour from the Consul General of France, Gerard Causer. She was the first woman ever to receive the Chevalier Commendation in 1978.

In 1953 Estée introduced her first fragrance, Youth Dew, a bath oil that doubled as a perfume. Instead of using French perfumes by the drop behind each ear, women began using Youth Dew by the bottle in their bath water. In the first year it sold 50,000 bottles, and by 1984 the figure had jumped to 150 million. Lauder was the subject of a 1985 TV documentary, Estée Lauder: The Sweet Smell of Success. Explaining her success, she said, "I have never worked a day in my life without selling. If I believe in something, I sell it, and I sell it hard."

Finally, we have Helena Rubinstein, a cosmetics entrepreneur, art collector, and philanthropist. She was the founder of the Helena Rubinstein Incorporated cosmetics company, which made her one of the richest women in the world.

At the outbreak of World War I, Helena moved to New York City where she opened a cosmetics salon in 1915, the forerunner of a chain throughout the country. This was the beginning of her vicious rivalry with the another great lady of the cosmetics industry, the previously mentioned Elizabeth Arden (Their rivalry is the subject of the musical War Paint, which begins Broadway previews on March 7th).

She was the first self-made female millionaire, in a time before women were even allowed to vote, an accomplishment she owed primarily to publicity savvy. Helena was both keenly aware of effective marketing and luxurious packaging, the attraction of beauticians in neat uniforms, and the appeal of celebrity endorsements.

All three of these women, in addition to shaping the world of cosmetics, made a clear statement to the world. A statement of capability, independence, and determination. A statement that has had echoes through the world of business and helped clear the way for many women to pursue their own ambitions. The women who have shaped the world are countless. They are figures from our nation's history, they are women who are still shaping the world today, and they are mothers, sisters, and friends. We all know women who inspire us to be our best selves.

Chicken & Snap Pea Stir-Fry over Angel Hair Pasta

This chicken stir-fry recipe highlights golden-brown cubes of chicken breast with the sweet flavors of sliced fennel, crispy snap peas and tarragon. Use a cast-iron skillet or carbon-steel wok for stir-frying to guarantee a beautiful sear on the chicken and vegetables. Serve this over whole-grain angel hair pasta for an easy, healthy dinner.

  • 8 ounces whole-wheat angel hair pasta
  • 1 pound boneless, skinless chicken breasts, trimmed
  • ¾ teaspoon salt, divided
  • ½ teaspoon freshly ground pepper, divided
  • ¼ cup all-purpose flour
  • 3 tablespoons extra-virgin olive oil, divided
  • 1 medium bulb fennel, cored and sliced
  • ¼ cup thinly sliced garlic
  • 1 pint cherry tomatoes, halved
  • 2 cups snap peas, trimmed
  • ⅓ cup white wine
  • 4 teaspoons chopped fresh tarragon
  1. Bring a large pot of water to a boil. Add pasta and cook until just tender, about 4 minutes. Reserve ¼ cup of the pasta water, then drain and keep the pasta warm.
  2. Meanwhile, cut chicken into 1-inch cubes and sprinkle with ¼ teaspoon each salt and pepper. Place flour in a shallow dish. Add chicken and toss to coat.
  3. Heat 1 tablespoon oil in a large cast-iron skillet or flat-bottom carbon-steel wok over medium-high heat until shimmering. Add the chicken and cook, stirring, until browned and just cooked through, 4 to 5 minutes. Transfer to a plate.
  4. Add the remaining 2 tablespoons oil, fennel and garlic to the pan; cook, stirring, until the vegetables just start to soften, 1 to 2 minutes. Add tomatoes, snap peas, wine, the reserved pasta water and the remaining ½ teaspoon salt and ¼ teaspoon pepper. Continue to cook, stirring, until the tomatoes start to burst, about 3 minutes.
  5. Return the chicken to the pan along with tarragon; cook, stirring, until the liquid is slightly thickened, about 2 minutes more. Serve the chicken and vegetables over the pasta.

Ready in 35 minutes. Serves 4.
