Morning are starting to get colder, fall veggies are coming! Enjoy the wonderful Zucchini, cabbage, corn and beets before there gone for another year.

~ RECIPE ~
Zucchini Bread
 
  • Ingredients
    • 3eggs, beaten
    • 1 cup unsweetened applesauce
    • 2 cups granulated sugar
    • 2 cups grated Zucchini
    • 1 teaspoon vanilla
    • 3 cups flour
    • 1 teaspoon salt
    • 3 teaspoons cinnamon
    • 1/4 teaspoon baking powder
    • 1 teaspoon baking soda
    • 1 cup chopped nuts (optional)
    •  
    • Combine eggs, applesauce and sugar until well blended. Stir in Zucchini and vanilla. Sift together flour, salt, cinnamon, baking powder and baking soda; stir in Zucchini mixture. Add chopped nuts.
    • Bake in 2 well-greased loaf pans at 350 degrees for 1 hour.
    • Approx 28 servings
