Zucchini has arrived!
Growing and eating food seasonally is so fun.  You get to celebrate the bounties of each season and really savor your favorite flavors.  You do your best to enjoy your favorites while they last; maybe you preserve them by canning or pickling, but eventually they come to an end and you adapt and look forward to what's next.  Asparagus has come to an end, but the great thing is that you enjoyed it at its peak flavor when it was in season and you'll enjoy it just as much next spring; distance truly does make the heart grow fonder!  Now that summer is in full swing, the zucchini is growing like crazy! There are so many good zucchini recipes and we will sprinkle them throughout the newsletter as the season continues.  Enjoy!

Zucchini Tomato Relish
This is very adaptable and a perfect addition to grilled meat this summer! 

2 small zucchini OR 1 cucumber (diced)
1 lb. tomatoes (peeled and diced)
1/2 cup sweet onion (thinly sliced)

Combine in medium bowl.  Add dressing (see below), starting with half and adding more to taste. 

1/4 cup oil
2 Tbsp apple cider vinegar or red wine vinegar
2 Tbsp sugar
1/2 tsp salt
1/4 tsp pepper
Choose seasoning of choice: 1/8 tsp celery seed; 1/4 cup fresh parsley (chopped); 1 Tbsp fresh oregano (chopped) and 1/4 tsp dry mustard; or 1 Tbsp fresh basil (chopped)

Whisk together until sugar is dissolved and dressing begins to thicken.  Salad will keep, refrigerated, up to 3 days.
