If you look at this week's CSA list, you'll see that there are some amazing salad ingredients & toppings!  Salad can be one of those things that people either love or hate.  I was never a big salad person (I prefer cooked veggies), but once I realized a salad can come in many forms, I changed my tune.  Here are some ideas for spicing up your salad...
  • Add something unusual - berries, salsa, water chestnuts, corn, pickled beets, hard-boiled eggs, green olives, capers, a squeeze of a lemon/lime, the possibilities are endless!
  • Fruit - orange slices, apples, plums, peaches...
  • Add protein - meat and beans (garbanzo, kidney, black beans work well)
  • Cheese is always good, especially feta, blue, and goat cheese
  • Add seeds or nuts - sunflower, sesame, or pumpkins seeds. Pecans, almonds, walnuts...
  • Make your own croutons with stale bread; they are so much better than store-bought!

~ RECIPE ~
Homemade Salad Dressings
Dressings are super flexible, so if you don't have an ingredient just leave it out or replace it!
Basic vinaigrette:
2 tablespoons Dijon mustard
2 tablespoons red wine vinegar
3 tablespoons olive oil
1 tablespoon fresh lemon juice (optional)
Salt & pepper to taste

Combine in jar with tight-fitting lid. Shake well

Strawberry vinaigrette:
1 cup strawberries, sliced
4 teaspoons rice vinegar
4 teaspoons lemon juice
1 tablespoon sugar
1 1/2 teaspoons honey
1/4 teaspoon salt
1/8 teaspoon each garlic powder, onion powder, dried basil, dried parsley flakes, pepper
1/4 cup olive oil
Puree strawberries in blender.  Add remaining ingredients except oil. Blend, then gradually add oil while blending on low speed. 

Two-seed dressing:
1/4 cup sugar or honey
2 tablespoons sesame seeds
1 tablespoon poppy seeds
1/4 cup cider vinegar or balsamic vinegar
1/4 cup olive oil
1/8 teaspoon Worcestershire sauce
1/4 teaspoon (paprika)
Salt & pepper to taste
Combine in jar with tight-fitting lid. Shake well.
