Not quite sure what to do with all the beets you've been getting in your CSA box? How about drinking them! Below is a delicious recipe using beets, carrots and apples. Something simple and healthy! This ruby red juice is a good source of both vitamins C and K. It also contains Beta-carotene, which is converted to vitamin A in the body-good for skin and night vision.  Adding chia seeds helps replace the fiber that is lost in the juicing process Be sure to drink your juice as soon as possible after it's made for the most nutritious bang. Enjoy!

~ RECIPE ~
Beet-Carrot-Apple Juice

 
  • Ingredients
    2 medium beets, trimmed and scrubbed
    1 Granny Smith apple, peeled and cored
    3 medium carrots, peeled
    1 tablespoon chia seeds, optional

     
Juice, in this order, the beets, apples and carrots, following your juicer's specific settings for each. Stir in the chia seeds if using and let soak for 5 minutes. Serve the juice immediately over ice, if desired.
