Birria, a deceptively simple stew of meat (traditionally goat), but more often than not beef; combines a rich tomato/chile broth spiced with bay leaves and other ingredients and is simmered for hours in a well-loved and deeply seasoned clay pot.
The special ingredients in this classic Jalisco dish are usually kept secret by the birrierio and handed down through generations. A fine birria is hauntingly delicious and reminds Northerners of a succulent braised beef brisket on steroids. Tender meat falling off of the bone served with a ladle full of delicious juicy broth.

Some birrerios include flavors such as adobo, oregano and even a little chocolate or cinnamon. It’s a matter of taste.

Always served with hot tortillas and fresh crispy condiments, bringing the flavors full circle.

Bowls of chopped cilantro, cabbage, onion, radishes and of course fresh lime all let you create your own perfect savory taco.

It's primarily known as a breakfast time taco and is the ultimate hangover cure.
One of our first Vallarta Eats Signature Taco Tours stops is Birria Cabrera.

A humble and delicious taco stand run by Eric and his wife Diana.
Eric’s father, Juan Jose Cabrera Meza, started the stand 35 years ago, and Eric’s brother Ricky continued the operation until 5 years ago when Eric took over.
The entire family helps out, Diana chops condiments cabbage, onion and radishes, while tending to their two adorable children.
Eric’s mother, Doña Lucy is responsible for the perfect savory flavor and measures out all of the ingredients: chiles, garlic, pepper, bay leaf, tomato, onion, and  then Eric cooks the Birria in a huge clay fired pot. As a rule, cooking time runs about 3 hours, from about 8-11pm.
On average Birria Cabrera serves up 11 kilos every day (about 600 tacos!). 2-3 kilos extra on weekends and 5 kilos and during busy Semana Santa.
