I absolutely love the free range (happy) eggs that I use for my home baking.
I always feel so delighted when I see the wonderful stack of eggs that have been delivered to my doorstep! It's even more joyous when a few double yolkers are stitting on top! I feel so sorry for the poor chicken who had to push that egg out!
When trying any new baking recipe for the first time, I would always follow the recipe instructions to a tee. This gives you a starting point to work from. Mostly, recipes need adjusting in some way. This may be the size of the eggs used, the oven temperature or the cooking time.
But the size of egg you use in baking makes a significant difference, and depending on the recipe, can make or break the outcome.
So, never feel disheartened when a recipe doesn't turn out as you had expected. I mostly have to tweak recipes a number of times before getting them to their best.
