Hi Everyone I have recently been working on my new Homemade Seed Crackers, that happen to be gluten free and dairy free. They are made up of a combination of almond meal, pumpkin seeds, sunflower seed, sesame seeds, garlic and finely chopped rosemary and some coarse sea salt. They are bound together with olive oil and psyllium husk.
These have now passed the various rounds of "taste testing" and here is some of the feedback:
"I thought the crackers were perfect in taste and size and I reckon you don’t want them any thicker than you made them, they balanced the toppings just right and I loved them!"
"A classy alternative for the gluten free-ers that I think everyone will actually enjoy! " 😊 🥳
Homemade Seed Crackers with Avocado and Tomato Salsa and Seed Crackers with Salmon and Lemon herb cream cheese.
Three more meat options have now been added to the Savoury Page on my website.Originally I had made Ginger Pork Skewers and the Lamb Koftas as mini kebabs, but the feedback was that you can't double dip for more sauce. So I decided instead to make them into balls, which can be dipped and eaten one at a time.
Ginger Pork Meatballs (2 per portion)
This is pork mince mixed with a little breadcrumbs, fresh grated ginger, chopped spring onion, coriander and lemon zest. These are then hand rolled and baked in the oven. Served with with bamboo skewers and an asian dipping sauce.
Turkish Lamb kofta Meatballs (2 per portion and gluten free)
These lamb kofta's use lean lamb mince mixed with a combination of cumin, smoked paprika, and cinnamon, garlic, parsley and lemon zest. They are served with bamboo skewers and a dill and yoghurt dipping sauce.
Chicken Satay Skewers (gluten free)
Homemade satay sauce which contains peanut butter, peanut oil, onion, garlic, ginger, lemon juice and soy sauce. This is blended to make a thick paste that the meat is marinaded in before being threaded onto skewers and cooked.
I hope these high protein options will keep your guests sustained and not too tipsy at your drinks and canapé evenings!
Cheers for now Angie Cunniffe
